Slow-cooking weekend...
Nov. 18th, 2013 07:39 pmAfter a warm winter and a warm spring, the weather has suddenly turned cold and wet. A perfect weekend for staying inside with the oven on. Here's a jointed chicken with tomato, capsicum and fresh sage...

So far, so good. Meanwhile, the chicken carcass has gone into the pot with some ginger and soya sauce to make a stock.

Next up, some pork ribs with cajun seasoning. Around here, these are known as "American" ribs, since they actually have the bones in them. Unlike "spareribs" which don't.

Meanwhile, I've saved the dripping from the chicken and used it to roast these vegies. (It may look like I spent the whole day cooking, but I was actually on the playstation most of the time. It's great to let the oven do the work sometimes...)

Next, some lamb, pumpkin and sweet potato, extending on the idea I had last week for a roasted lamb "stew". The pumpkin turned out to go really well with the fatty lamb,

And lastly (and least successfully), roast eggplant with onion and chicken (scavenged from the carcass before it went into the stock). The eggplant was still a bit dry in parts. Not sure if I needed more oil or just to cook it for longer.

At last the cooking is done (for the week!) and the rain has eased. Time for a quick explore along the Hacking River, before the next shower sets in...
