"Spring" at Wayama
Oct. 29th, 2013 08:36 pmBack to Wayama to complete our kaiseki tour of the season...

First up, this tofu "ankake", a sort of sticky, sweet savoury dish with what I took for crab pieces amongst the fried tofu.

Alongside it came a little glass of peach juice, ice and a hint of sake...

The sashimi course was a tour-de-force. That's tuna on the left, wrapped in cucumber, and grouper and salmon on the right.

Next came an assortment of different tastes. As you can see, there was a deep-fried prawn, some fried salmon and broad beans. At the end of the skewer is a tiny slice of fish cake and at the back are cold vegetables in a sesame vinegar. And hidden inside that banana leaf is a delicate piece of white fish sushi.

Continuing the seafood theme, next we have a cake made of raw scampi and scallop with avocado and fish roe.

Liem inspects the next dish with interest.

A tiny plate of steamed chicken, topped with egg and vegetables!

The rice course features rice cooked in stock and dressed with beans.

And red miso soup.

And, finally, a milk-based pudding with cane syrup for dessert.

And that's the last of the seasons! A wonderful experience. We still can't believe we were lucky to find a place such as this near to where we live.
Now to see what the next year holds...
